Method
- Heat a skillet over medium heat and melt 1 tablespoon of butter to coat the surface.
- Place a tortilla in the skillet, scatter with both cheeses and cilantro, and fold in half.
- Cook 2 minutes per side until the tortilla is deeply golden and the cheese is fully melted.
- Cut into wedges and serve with salsa roja, crema, and lime wedges on the side.
Cooks notes. Recipes are tested in a US home kitchen. Substitute lemon for lime if you must, but the result will read brighter. Salt to taste -- our quantities skew toward kosher.
