Classic Cheeseburger

Method

  1. Divide the beef into four 6 ounce balls and season generously with salt and pepper.
  2. Whisk the mayonnaise, ketchup, and mustard together to make the special sauce.
  3. Smash each ball on a hot cast iron skillet for 3 minutes, flip, and top with cheese for 2 more minutes.
  4. Toast the buns, spread sauce on both sides, and stack lettuce, tomato, and patty before serving.
Cooks notes. Recipes are tested in a US home kitchen. Substitute lemon for lime if you must, but the result will read brighter. Salt to taste -- our quantities skew toward kosher.
