Method
- Divide the beef into four 6 ounce balls and season generously with salt and pepper.
- Whisk the mayonnaise, ketchup, and mustard together to make the special sauce.
- Smash each ball on a hot cast iron skillet for 3 minutes, flip, and top with cheese for 2 more minutes.
- Toast the buns, spread sauce on both sides, and stack lettuce, tomato, and patty before serving.
