Chicken Tikka Masala

Charred yogurt-marinated chicken in a creamy tomato sauce spiced with cumin, coriander, and fenugreek. The crowd-pleasing British-Indian curry.

Method

  1. Marinate the chicken in yogurt and tikka paste for 2 hours, then thread on skewers.
  2. Broil the skewers for 8 minutes until charred and just cooked through, turning once.
  3. Saute onion and garlic, add tomatoes and spices, and simmer 15 minutes until thickened.
  4. Stir in cream, fenugreek, and the chicken, and simmer gently for 10 minutes to meld flavors.
Cooks notes. Recipes are tested in a US home kitchen. Substitute lemon for lime if you must, but the result will read brighter. Salt to taste -- our quantities skew toward kosher.
