Salmon Teriyaki

Pan-seared salmon fillets glazed with a glossy homemade teriyaki of soy, mirin, sake, and sugar. Served over short grain rice with sesame and scallion.

Method

  1. Whisk the soy sauce, mirin, sake, and sugar in a saucepan and simmer until syrupy.
  2. Pat the salmon dry, then sear skin side down in a hot oiled pan for 4 minutes.
  3. Flip the fillets, brush generously with the teriyaki glaze, and cook 2 minutes more.
  4. Transfer to plates over rice, drizzle with extra glaze, and finish with sesame and scallion.
Cooks notes. Recipes are tested in a US home kitchen. Substitute lemon for lime if you must, but the result will read brighter. Salt to taste -- our quantities skew toward kosher.
