Falafel with Tahini

Crispy chickpea fritters seasoned with cumin, coriander, and herbs, fried golden and topped with creamy tahini sauce. A Middle Eastern street food favorite.

Method

  1. Soak the dried chickpeas overnight in plenty of cold water, then drain very thoroughly.
  2. Pulse the chickpeas, onion, garlic, herbs, and spices in a food processor to a coarse meal.
  3. Form 24 small balls, rest 15 minutes, and fry in 350 degrees F oil for 4 minutes until deep brown.
  4. Whisk tahini, lemon juice, garlic, and water until creamy, then drizzle over the warm falafel.
Cooks notes. Recipes are tested in a US home kitchen. Substitute lemon for lime if you must, but the result will read brighter. Salt to taste -- our quantities skew toward kosher.
