Falafel with Tahini
Crispy chickpea fritters seasoned with cumin, coriander, and herbs, fried golden and topped with creamy tahini sauce. A Middle Eastern street food favorite.

Method
- Soak the dried chickpeas overnight in plenty of cold water, then drain very thoroughly.
- Pulse the chickpeas, onion, garlic, herbs, and spices in a food processor to a coarse meal.
- Form 24 small balls, rest 15 minutes, and fry in 350 degrees F oil for 4 minutes until deep brown.
- Whisk tahini, lemon juice, garlic, and water until creamy, then drizzle over the warm falafel.
Cooks notes. Recipes are tested in a US home kitchen. Substitute lemon for lime if you must, but the result will read brighter. Salt to taste -- our quantities skew toward kosher.
