St Louis Pork Ribs

Trimmed pork spareribs rubbed with sweet paprika spice, smoked over apple wood, and lacquered with a Kansas City style sauce. Tender but with a satisfying bite.

Method

  1. Remove the membrane from the back of the ribs and coat heavily with the paprika and sugar rub.
  2. Smoke at 225 degrees F over apple wood for 3 hours until the bark sets and turns mahogany.
  3. Wrap the ribs in foil with apple juice and a pat of butter, then smoke 2 more hours until tender.
  4. Unwrap, brush with BBQ sauce, and smoke 30 more minutes to set the glaze before slicing.
Cooks notes. Recipes are tested in a US home kitchen. Substitute lemon for lime if you must, but the result will read brighter. Salt to taste -- our quantities skew toward kosher.
